German apple cake recipe

This German apple cake recipe was one of many cakes that my grandma made for Sunday dinners. Just the smell of it in the oven brings back great memories.

2 large eggs

1 c. salad oil

2 c. sugar

2 c. flour

2 tsp. cinnamon

1 tsp. soda

½ tsp. salt

4 c. diced apples {peeled or not, depending on your taste}

1 c. chopped pecans

1-1/2 tsp. vanilla

Beat eggs and salad oil until foamy. Add sugar, flour, cinnamon, soda, salt, and vanilla. Mix well. Add diced apples and nuts. Pour into a greased and floured 9x13 inch pan or Bundt pan. Bake 45 to 60 minutes at 350 degrees.

Cool and frost with Cream Cheese Frosting or dust with powdered sugar.
